A very quick Thai recipe is Stir-Fried Kale with garlic and oyster sauce. Easy and delicious, and this serves four people.
Ingredients– Just get 10-15 fresh kale leaves, 3 cloves of garlic, oyster sauce and olive oil.
To Make – Wash the kale and rip up the leaves into small pieces. You can use either just the leaves or also the stalks, depending on your preference. I use both, as I love the crunchy stalks but some people prefer just leaves.
Put the kale in boiling water for about a minute to blanch it. Take it out and transfer it to cold water. Chop up the garlic cloves and put into a frying pan with some olive oil and fry until golden brown.
Now, add the kale leaves followed by as much oyster sauce as it takes to coat the leaves. Mix everything together and stir fry for 2-3 minutes. Voila. Stir-fried kale, Thai-style.
I love to eat it with boiled rice and tom kha gai (spicy Thai coconut soup) but you can eat it with just about everything. Even just by itself as a topping or side dish for fried rice.
